Herb-Crusted Sirloin with Garlic Butter

A sirloin elevated with a bold herb crust and rich garlic butter sauce — simple ingredients, serious results.

Ingredients

  • 2 Meridian Beef Sirloin steaks (1 inch thick)
  • 2 tbsp kosher salt
  • 1 tbsp black pepper
  • 2 tbsp fresh rosemary, finely chopped
  • 2 tbsp fresh thyme, finely chopped
  • 1 tbsp Dijon mustard
  • 4 tbsp butter
  • 4 garlic cloves, minced
  • 2 tbsp avocado oil
  • Juice of half a lemon

Instructions

  1. Mix rosemary, thyme, salt, pepper, and Dijon. Coat steaks evenly. Rest 20 minutes.
  2. Heat cast iron over high heat. Add oil.
  3. Sear steaks 3 minutes per side without moving.
  4. Reduce heat to medium. Add butter and garlic. Baste continuously 2 minutes.
  5. Finish with a squeeze of lemon. Rest 5 minutes before serving.
