Ingredients
- 2 Meridian Beef Sirloin steaks (1 inch thick)
- 2 tbsp kosher salt
- 1 tbsp black pepper
- 2 tbsp fresh rosemary, finely chopped
- 2 tbsp fresh thyme, finely chopped
- 1 tbsp Dijon mustard
- 4 tbsp butter
- 4 garlic cloves, minced
- 2 tbsp avocado oil
- Juice of half a lemon
Instructions
- Mix rosemary, thyme, salt, pepper, and Dijon. Coat steaks evenly. Rest 20 minutes.
- Heat cast iron over high heat. Add oil.
- Sear steaks 3 minutes per side without moving.
- Reduce heat to medium. Add butter and garlic. Baste continuously 2 minutes.
- Finish with a squeeze of lemon. Rest 5 minutes before serving.
