OUR STORY

Hello, Loveland. Tom Hewson here.

I’ve called Loveland home for more than 60 years. Many of you know me from my time as a swim coach, a teacher at Thompson School District, a member of our local church, Little League, Colorado Youth Outdoors, and plenty of other places our paths have crossed. If you know me, you know that when I put my name on something, you can trust it’s something special.
For the last seven years, I have worked in the agriculture world, and that effort took me down the back roads of eastern Wyoming, the Nebraska Panhandle, and the eastern plains of Colorado. I sat at kitchen tables with growers, walked feedlots at sunrise, and shook hands with ranchers who work harder than anyone I know. Every once in a while, you meet someone who stops you in your tracks.
In 2023, I met a fifth-generation cattle family: a husband, a wife, and their three boys. Over three and a half years of working alongside them, I realized I was watching something rare. They aren’t chasing volume. They’re carrying on a legacy.

What Sets Their Beef Apart

Their Black Angus herd comes from a genetic line they’ve built carefully over generations. Every calf is born on grass, raised as a yearling, and finished for rich marbling and flavor. The crops that feed the herd are grown with zero synthetic nitrogen. Every animal is watched closely, with special attention to gut health. Their motto says it all: “Take care of the animals, and they’ll take care of you.” They live it every day.

They’ve never advertised, not once. Every customer has found them by word of mouth. Our friendship opened an unexpected door: the chance to bring their beef to the Front Range. I’m excited to do just that.

Putting It to the Test

Make no mistake, this beef is special. But before leaving the corporate world to start Meridian, I wanted to know just how good it really was. So I took it to several restaurant owners and asked them to judge it the way they’d judge any supplier. Here’s what they told me:

  • The fat: It has the hard, white finish that high-end steakhouses go looking for.
  • The marbling: It’s consistent across every cut, even the sirloins, where good marbling is hard to find.
  • The eating: Taste and tenderness earned an A+ across the board.

That settled it.
