Ingredients
- 1.5 lbs Meridian Beef ground beef (80/20)
- 1.5 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 4 brioche burger buns
- 4 slices sharp cheddar
- Butter for toasting buns
Instructions
- Divide beef into 4 equal portions. Handle minimally — do not overwork.
- Form into patties slightly wider than your bun. Press a dimple in the center.
- Season both sides with salt, pepper, and garlic powder right before cooking.
- Heat cast iron or grill to high. Cook 3–4 minutes per side for medium.
- Add cheese in last 60 seconds. Cover to melt.
- Toast buns in butter 1–2 minutes.
- Build and serve immediately.
Pitmaster Tip
Never press down on the patty while cooking — you’re squeezing out the juices that make it great. The dimple in the center prevents it from puffing up.
