Perfect Flank Steak

Lean, flavorful, and ideal for marinades — flank steak is the go-to cut for fajitas, steak salads, and Asian-inspired dishes.

Ingredients

  • 1.5–2 lbs Meridian Beef Flank Steak
  • 3 tbsp soy sauce
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 4 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp chili flakes
  • 1 tbsp kosher salt
  • 1 tsp black pepper

Instructions

  1. Whisk marinade ingredients together. Add flank steak and marinate 2–4 hours (or overnight).
  2. Remove from marinade. Pat dry completely.
  3. Heat grill or cast iron to high heat.
  4. Cook 4–5 minutes per side for medium-rare (130°F internal).
  5. Rest 8 minutes — do not skip this step.
  6. Slice very thin, strictly against the grain at a 45-degree angle.

Pitmaster Tip

Slicing against the grain is non-negotiable with flank steak — the fibers run lengthwise and cutting with them results in a chewy, tough bite. Go perpendicular.
