Perfect New York Strip Steak

Bold, beefy flavor with a firm texture — the New York Strip is a steakhouse classic that rewards proper technique.

Ingredients

  • 2 Meridian Beef New York Strip steaks (1–1.25 inch thick)
  • 2 tbsp coarse kosher salt
  • 1 tbsp cracked black pepper
  • 2 tbsp butter
  • 3 garlic cloves, smashed
  • 2 sprigs fresh thyme
  • 2 tbsp avocado oil

Instructions

  1. Bring steaks to room temperature 30 minutes before cooking.
  2. Pat dry and season liberally with salt and pepper on all sides.
  3. Heat cast iron skillet over high heat until smoking. Add oil.
  4. Sear 3–4 minutes per side for a deep golden crust.
  5. Add butter, garlic, and thyme. Baste for 90 seconds.
  6. Rest 5 minutes on a wire rack before slicing.

Pitmaster Tip

Trim the fat cap slightly but leave some on — it bastes the steak naturally during cooking. Pull at 130°F for perfect medium-rare.
