Ingredients
- 2 Meridian Beef New York Strip steaks (1–1.25 inch thick)
- 2 tbsp coarse kosher salt
- 1 tbsp cracked black pepper
- 2 tbsp butter
- 3 garlic cloves, smashed
- 2 sprigs fresh thyme
- 2 tbsp avocado oil
Instructions
- Bring steaks to room temperature 30 minutes before cooking.
- Pat dry and season liberally with salt and pepper on all sides.
- Heat cast iron skillet over high heat until smoking. Add oil.
- Sear 3–4 minutes per side for a deep golden crust.
- Add butter, garlic, and thyme. Baste for 90 seconds.
- Rest 5 minutes on a wire rack before slicing.
