Meridian Beef began with something simple: knowing what exceptional beef looks like long before it reaches the dinner table.
For more than seven years, Tom Hewson worked alongside farmers, ranchers and agricultural producers throughout Colorado and the surrounding region. Along the way, he met Ty, a fifth-generation Colorado cattle rancher and grower.
What stood out wasn't simply the cattle Ty raised. It was how he raised them.
Great Beef Takes Time
Ty believes exceptional beef can't be rushed.
His cattle are grass grown and transitioned through a carefully managed feeding program using roughage and small grains. His finishing process can extend 150 days or more, allowing time to develop the marbling, tenderness and rich beef flavor he's looking for.
Feed crops are grown without synthetic fertilizer, and the cattle are raised without added hormones or steroids.
For Ty, it comes down to a philosophy passed through generations:
“Take care of the animal, and it takes care of you.”
Tom’s Agricultural Experience
For more than seven years, Tom Hewson has worked throughout Colorado, eastern Wyoming, and western Nebraska in seed and fertilizer sales and distribution, building relationships with farmers, ranchers, dairy producers, and other agricultural professionals along the way.
It was through this work that Tom first met Ty, a fifth-generation cattle rancher and grower in eastern Colorado. Years spent working directly with producers gave Tom a firsthand appreciation for the knowledge, hard work, and stewardship required to care for the land and livestock, as well as a unique perspective on the many factors that ultimately influence the quality of the food reaching a family's table. That experience allowed him to recognize that Ty's approach to raising and finishing cattle was something different, and something worth sharing with more Colorado families.
Know Where Your Beef Comes From
Much of the beef sold through grocery and big-box retailers travels through a large supply chain. You may know the grade and cut, but know little about the ranch, how the cattle were raised or the feeding program behind the beef.

When Tom began thinking about bringing Ty's beef to more Colorado families, he reached out to his friend and award-winning marketer, Chris Morrissey, for advice.
