Some familiar cuts come from the same part of the animal. Choosing one may mean giving up another. We'll point these decisions out.

Where Does Ground Beef Come From?

Ground beef comes from trimmings and portions you choose not to keep as individual cuts. More specialty cuts can mean less ground beef.

Steak Preferences

We'll use these settings for applicable steaks whenever practical.

Ribeye & Prime Rib

Ribeye Steaks and Prime Rib Roast come from the same premium rib section. How would you like us to use it?

The animal contains a fixed amount of rib. This choice controls how the rib section is allocated; it does not guarantee a number of steaks or pounds.

T-Bone & Porterhouse OR New York Strip & Filet

A T-Bone or Porterhouse contains the strip loin and tenderloin separated by the bone. If this section is deboned, those muscles become New York Strip Steaks and Tenderloin/Filet.

These are alternative fabrication methods for the same short-loin allocation. Exact combinations must be confirmed by the processor, especially for fractional orders.

Chuck: Roasts, Steaks & Specialty Cuts

The chuck can provide traditional slow-cooking roasts, steaks, specialty cuts and ground beef. Choosing more cuts from the chuck means less of that section is available for other uses.

Specialty cuts: Flat Iron, Denver Steak, Chuck Eye and Petite Tender are processor-approved options only. Do not assume availability.

Sirloin

The sirloin can be prepared several different ways. We'll show you the options available from your portion of beef.

Final sirloin options must be validated against the processor's actual cutting method and availability.

Round: Roasts, Steaks & Everyday Cuts

The round is a large, lean section that can be used for roasts, steaks, cube steak, stew meat and ground beef.

Separate muscles within the round can be fabricated differently. The final allocation must follow processor-defined rules.

Brisket

A whole brisket is a classic cut for smoking and slow cooking.

Beef Ribs

Exact rib styles must match processor capabilities.

Fajita & Grilling Cuts

These specialty cuts are limited because each animal only produces a small amount. Final availability depends on your portion and processor fabrication.

Shank & Soup Bones

Ground Beef

Ground beef comes from usable trimmings and portions that aren't retained as individual steaks, roasts or specialty cuts. We cannot guarantee an exact amount.

Any additional processing fees should be disclosed before submission.
